Happy Praline Day!

As it is well known, many culinary festivals are celebrated in the US. Thus, the praline is honoured with a special holiday on 24th June of each year.

However, what makes a praline so special? Fact is - not every chocolaty confection is a praline. In fact, a chocolate product must meet specific criteria to be officially considered a praline. In addition to certain ingredients and manufacturing processes, the melt-in-the-mouth temptation must, for example, have a typical bite-size and a chocolate content of at least 25 % in the couverture.
